Ingredients

4 medium ripe tomatoes, seeded

and chopped

½ medium cucumber, peeled,

seeded and chopped

½ cup diced red onion

2 tablespoons fresh parsley, chopped

2 tablespoons fresh mint, chopped

1 tablespoon red wine vinegar

2 teaspoons olive oil

1 teaspoon Dijon mustard

Salt and freshly ground black

pepper to taste

Directions

n

In a large bowl, combine tomatoes,

cucumber, red onion, parsley and

mint.

n

In a small bowl, whisk together

vinegar, oil and mustard.

n

Add to tomato mixture and toss

to coat.

n

Season to taste with salt and

black pepper.

n

Serve chilled or at room temperature.
